Ok... so not a true terrine, but this is my version. It is delicious by itself or as a side to any meal. The best part... It is so simple!
How to make it...
1. You can use any veggies. I like eggplant, zucchini, yellow squash, sweet peppers and onions.
2. Place sliced vidalia onions and yellow and orange peppers in a fry pan. You may sauté with extra virgin olive oil or steam with water for a low cal version. Cook until soft.
3. Grill or roast eggplant, zucchini and yellow squash. I like to roast using a vegetable oil spray, salt and pepper.
4. Layer one type of veggie at a time in a baking pan. Repeat order of vegetables for a second or even a third time. Add any herbs or spices of your choice. I like to add basil.
5. Simply refrigerate.
Eat it cold, or warm! Add cheese, chicken, sausage, beans, or any other protein for a complete, delicious meal. It is that simple and delicious!
